Gluten-Free Energy Bites

Just as good as dessert, but with lots of energizing nutrients to get your day going.

  • 1 ¼ cups pitted dates
  • 1 cup gluten-free rolled oats
  • ¼ cup nut butter
  • ¼ cup dark chocolate chips
  • pinch of sea salt
  • pinch of nutmeg


  • In a food processor or blender, process the dates until very finely chopped
  • Add in the oats, nut butter, dark chocolate, sea salt, and nutmeg. Process again until all ingredients are fully incorporated, scraping own the sides of the food processor as needed
  • Scoop mixture (about a spoonful) into your hand and form a ball. Place on a lined baking tray
  • Chill the energy bites in the refrigerator for 15 minutes, and store in the fridge in a sealed bag or airtight container. Enjoy!


  • The flavors of these bites are super customizable — just keep dates and oats as the base. You can add so many tasty things like lemon zest, dried fruits, crushed pretzels, protein powder, etc. 
  • I use a mixed nut butter from Trader Joe's that I've been liking a little more than peanut butter lately. It's not as sweet but is packed with flavor that I find more versatile. Use any nut butter here or omit completely — you can add seeds instead if you prefer
